Ingredients

- 2 medium beets, peeled and grated
- 1 small carrot, grated (optional)
- ¼ cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp honey or maple syrup (optional)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup crumbled feta or goat cheese (optional)
- 2 tbsp chopped walnuts or sunflower seeds (optional)
Instructions
- Peel and grate the beets (and carrot, if using).
- In a bowl, combine grated beets, carrot, and parsley.
- Drizzle with lemon juice, olive oil, and honey (if using).
- Season with salt and black pepper, then toss well.
- Top with feta cheese and walnuts (if using).
- Serve fresh and enjoy!
