Raw Beet Salad With Apples And Carrots

Can I put raw beets in my salad?

Ingredients

  • 2 medium beets, peeled and grated
  • 1 small carrot, grated (optional)
  • ¼ cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup crumbled feta or goat cheese (optional)
  • 2 tbsp chopped walnuts or sunflower seeds (optional)

Instructions

  • Peel and grate the beets (and carrot, if using).
  • In a bowl, combine grated beets, carrot, and parsley.
  • Drizzle with lemon juice, olive oil, and honey (if using).
  • Season with salt and black pepper, then toss well.
  • Top with feta cheese and walnuts (if using).
  • Serve fresh and enjoy!
