- 8 ounces pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh basil, chopped (plus more for garnish)
- Salt and pepper, to taste
Instructions
- Prepare the Chicken: Season chicken breasts with salt, pepper, and garlic powder. Sear in olive oil for 5-7 minutes per side until golden and cooked through. Remove and slice.
- Cook the Pasta: Cook pasta in salted water until al dente, then drain, reserving a bit of pasta water.
- Make the Sauce: In the same skillet, sauté garlic in olive oil, then add chicken broth, heavy cream, sun-dried tomatoes, Parmesan, and basil. Simmer for 3-5 minutes.
- Combine: Add sliced chicken and cooked pasta into the sauce. Toss to coat. Add reserved pasta water if needed to thin the sauce.
- Serve: Garnish with additional Parmesan, fresh basil, and optional crushed red pepper flakes or toasted pine nuts.
